Our Story

We started with a simple question: why doesn’t the taste hold?

Mezaj began in a Damascus kitchen with a simple frustration: the same dish, made by the same cook, never tasted quite the same twice. The spices were good. The blending was guesswork.

We asked the people who live with that problem every day: working chefs. Not to endorse a product, but to build one. Each blend started as a chef’s own house mix, then went through months of weighing, adjusting and tasting until it behaved the same on a Tuesday lunch and a Friday wedding.

The name came easily. In Arabic, mezaj is what you get when things are blended well: a temperament, a balance, a taste that is exactly yours. “Ala mezaji” is what a Syrian says when a plate is just the way they like it. That is the bar.

02 The blending philosophy

Three rules we do not break.

One dish, one blend

We do not make all‑purpose seasonings. Every Mezaj blend answers one question: what does this dish need, and in what proportion?

Weighed, not eyeballed

Formulas are fixed to the gram. When a chef signs off on a recipe, that is the recipe, batch after batch.

Tested in service

A blend is not finished on a tasting spoon. It is finished when it has run through a full service in a real kitchen without adjustment.

03 Why chef‑created blends

Because a kitchen cannot run on guesswork.

  • 01 Consistency: the same result every time, from any cook on the line.
  • 02 Dish‑specific: proportions built for kabsa, or shawarma, or grilled fish, not for everything at once.
  • 03 Kitchen‑proven: every formula has survived a real service before it carries a chef’s name.
  • 04 Honest origin: chefs are co‑creators and are named on the jar, because they earned it.

04 Sourcing and quality promise

Whole, from a named origin, ground days before packing.

We buy whole, from origins we can name, and grind in small batches close to packing so the aroma is still in the jar when it reaches the kitchen. No fillers, no anti‑caking agents, no colourings. If a harvest is not good enough, we wait.
